This tasty pastry is from Kermanshah, which is an Iranian city with Kurd settelers. Kermanshah has a beautiful nature with many historic places dating back to Achamedian Empire. There is a statue of "Hercules", which was erected by Alexander the great after he took over Persia. Also, there are mountains of "bistoon" , where one of the prominent love stories of persian litereture, "Shirin andFarhad", was depicted.
And here is how it is baked:
Flour 150 g
baking powder 10 g
caster sugar 10 g
salt 1/4 tsp
yogur 80 g
1- Mix Flour, Baking powder, Caster sugar and Salt! pass it through colander twice, to make it smooth and fine
2- Stir yogurt until it becomes smooth!
3- Melt the butter, add the yogurt to hot butter and mix. take the butter off, before it starts to boil.
4- Add the dry ingredients to yogurt and butter mixture. Mix it with tip of finger until it granulates. then massage the whole paste and leave it for 5 to 10 min.
5- Cut the paste in strips and roll it with squashed date and chunky walnut.
6- Brush top of the rolls with egg yolk.
7- Leave it in the oven for 15 min in 200 centigrade.
* amount of date and walnut, depends on how rich you want the pastry to be.
** it is better not to use dried date, as you have to squash it. use Ammari date, or get "Mazafati date" from Ishtar (951 Sydney Rd, North Coburg phone: 03 93549212).
