Sticky date cake

After an extended period of silence from my end (no time + no internet + no camera = garrr-no inspiration) finally got my cooking mojo back (if only I could balance it out with the rest of my life...). Having been delegated as cake bringer for a workmate's birthday was unsure what to bring but wanted to at least attempt making something (if it failed, I'd resort to default cake purveyor- Brunetti's). A quick squizz through the few cookbooks at home came across a recipe for sticky date pudding but I decided to make it as a cake- a foolproof recipe for anyone who has lost confidence in the kitchen.

The 'greedients
puds
- 1 cup roughly chopped dates
- 1 1/4 cup brown sugar
- 60g butter, melted
- 1 teaspoon baking soda
- 1 cup boiling water
- 2 eggs
- 1 cup of self-raising flour

mmm... budderscotch sauce
- 1 cup of cream
- 50g butter
- 1 cup of brown sugar
- 1/2 tsp vanilla extract

vanilla ice cream
strawberries to decorate

The 'steps
1. Set oven to 180 degrees celsius.
2. In a small bowl combine chopped dates, bicarb soda and boiling water, let stand for 5 minutes and then blend in a mixer.
3. In a large bowl using a food processor or whisk (works off some of those calories you'll build up!) brown sugar and butter until fluffy.
4. Add 2 eggs and continue to mix until combined.
5. Add blended date mixture stir through until combined.
6. Finally add self-raising flour and mix well.
7. Pour into a medium 20x23cm cake tin (or loaf/bundt tin, etc.) and cook for 40-50min at same over temperature. Test skewer comes out clean.
8. Melt butter, brown sugar and cream in a small saucepan.
9. Let cake cool for 10-15min before removing from cake tin.
10. Optional: Allow butterscotch sauce mixture to cool sufficiently and whisk into frosting before decorating cake, otherwise sauce can be prepared in advance and reheated just before serving.
11. Add a generous dollop of ice-cream and strawberries and savour the sweet sugar hit!

  2. very nice list of 'greedients' to evoke greedy delight in everyone who's had a piece this lovely looking sticky date pudding. do you reckon they should be abbreviating it to SDP like the BLT?
