(in fact, i have a vague memory of bill endorsing toothpaste, but perhaps that was in a dream. or an alternate universe...)
when it gets this cold, all i want is a cup of tea, sweet treats and a bit of couch-potato time. now that i have access to an oven again (hurray), i happily christened my return to baking with these super easy delicious bites.
i didn't wait for them to cool as i love them straight out of the oven: warm fudge-y middle with the crusty top. it's so easy you'll be back to mooching around in no time at all, happy couch potato-ing!
from bills food by bill granger
1/2 C caster sugar
2/3 C cocoa powder
1/2 C plain flour
1 tsp baking powder
4 eggs, beaten
200 g unsalted butter, melted
2 tsp vanilla extract
200 g dark chocolate buttons
[i added a handful of chopped walnuts]
Preheat oven to 160C (315F).
Stir sugar, cocoa powder, flour and baking powder together in a bowl.
Add beaten eggs, melted butter and vanilla extract. Mix until combined.
Mix in the chocolate buttons [and chopped walnuts].
Pour into a lined 22cm square tin.
Bake for 40-45 minutes.
Allow to cool, then slice into bite size pieces. Dust with cocoa if you please.
Serve with ice cream or chocolate ganache.
