bills brownies

ah bill.
so smiley.
nice simple recipes.
no deference to apostrophes.
....
such white teeth.
(in fact, i have a vague memory of bill endorsing toothpaste, but perhaps that was in a dream. or an alternate universe...)

when it gets this cold, all i want is a cup of tea, sweet treats and a bit of couch-potato time. now that i have access to an oven again (hurray), i happily christened my return to baking with these super easy delicious bites.


i didn't wait for them to cool as i love them straight out of the oven: warm fudge-y middle with the crusty top. it's so easy you'll be back to mooching around in no time at all, happy couch potato-ing!

chocolate brownies

from bills food by bill granger

1/2 C caster sugar
2/3 C cocoa powder
1/2 C plain flour
1 tsp baking powder
4 eggs, beaten
200 g unsalted butter, melted
2 tsp vanilla extract
200 g dark chocolate buttons
[i added a handful of chopped walnuts]

Preheat oven to 160C (315F).
Stir sugar, cocoa powder, flour and baking powder together in a bowl.
Add beaten eggs, melted butter and vanilla extract. Mix until combined.
Mix in the chocolate buttons [and chopped walnuts].
Pour into a lined 22cm square tin.
Bake for 40-45 minutes.

Allow to cool, then slice into bite size pieces. Dust with cocoa if you please.

Serve with ice cream or chocolate ganache.

  1. You didn't dream it, JFox! bill (I assume I'm supposed to use a lowercase 'b' as well as rejecting apostrophes) did indeed advertise Macleans lemon-mint toothpaste for a while.

    Maybe he should stick with brownies. Yum.

    then again, i spose you need toothpaste after you eat ;)

    Those look great- got jealous and made some too- perfect brownie weather, with a hot coffee and a dollop of ice cream!

    Also, welcome back to the baking fold- always good to have the convenience of an oven when cooking inspiration/procrastination hits! :)

    hope you liked the brownies, they look better than the sorry pic i posted. i was too busy eating them and the representative pic is literally the very last bite!
