Choc, almond & orange cookies

What do you do when you have a baking craving and there's no eggs?
You make cookies!
The following was modified from a recipie on the back of Cadboury's cocoa:

1 cup Almond meal
125g Softened butter (unsalted)
1/3 cup Castor sugar
1 tsp Vanilla essence
2/3 cup plain flour
1/3 cup Cocoa
Grated rind of one orange
A squeeze of OJ (to add extra taste)
Almonds for decoration (makes 32)

1. Whisk butter, sugar and vanilla essence together till light, then add in the OJ and the grated rind.
2. Add in the flour and almond meal, then the cocoa.
3. Roll into small balls, flatten and pop an almond on the top.
4. Bake ~15-20 mins at 180C.
5. Cool, then bring them into the lab the next day and watch them disappear....

  2. Yay! Welcome Fonz.. I must add to the kudos- those cookies look superb and I'm sure would've tasted sinfully good too!

    That explains why everyone was fighting over the last cookie!!!
