J'aime L'Orange

If everyone has a cooking "life", then I'm still a toddler. This cake was a big hit with my tute group earlier this year, who demanded the recipe after promptly guzzling the whole thing. It's similar to the aforementioned yoghurt lemon cake in that although the recipe is straight-forward, you get a rich, moist and impressive-looking product. I should mention that normally icing sugar isn't necessary on this cake, but despite making it several times now, during today's attempt the top got a bit singed. So er, the icing sugar is for covering my tracks.

The original recipe appears in Stephanie Alexander's bible, The Cook's Companion.

2 large, ripe oranges
6 eggs, beaten
250 g ground almonds
250 g sugar
1 tsp baking powder

Boil the oranges in a small volume of water, in a covered saucepan for 2 hours.
Allow the oranges to cool and cut roughly.
Pre-heat oven to 190 oC/375 oF.
Combine the oranges with the other ingredients in a large mixing bowl, either with an electric beater or manually.
Pour the batter into a greased ~20cm round baking tin. Ensure the baking tin is at least 6 cm deep because the cake rises quite a bit during baking.
Bake for 50 minutes, by which time an inserted skewer should come out clean. The original recipe says 1 hour, but this more often than not seems to result in a slightly dried-out top.


Best enjoyed with a generous dollop of vanilla ice-cream on the side, and a mug of earl grey.

  1. yummo yossarian! the combination of oranges and almonds in cake form is magical in my opinion! the combo is up there with the like of bacon & eggs or strawberries & cream or gin & tonic i reckon. great result and such a simple recipe!

    I wonder was the recipe the same as the chocolate and almond cake (but with oranges instead of chocolate) you made a couple of months ago and brought over for our feast?

  3. hmm serenity, i'm totally in agreement with you - oranges and almonds are a match made in heaven. i once had to modify this cake to accomodate a non-nut-eater and it just ain't the same minus the almonds. the cake actually turned out flat as a tack in their absence!

    ...and m's, the choc and almond cake recipe is similar, except that it has the added evils of butter and alcohol with castor sugar instead of regular sugar. am so chuffed that i can finally post too!
